Pecan Breaded
Fish
Ingredients:
Breading:
- 1 cup pecans
- 1 tsp. garlic salt
- 1/2 tsp pepper
- 1/2 cup bread crumbs
- 4-6 walleye fillets
- Olive oil or canola oil
Mix breading ingredients in blender
4-6 fillets of Walleyes dried with paper
towel. Brush fillets lightly with olive oil or canola oil
and roll in the breading. Place in glass baking dish lightly
oiled (or line pan in tin foil for easy cleanup). Bake 10-20
minutes or until fillets flake to touch at 400 degree oven.
Garnish with Lemon Mayonnaise (optional).
Lemon Mayonnaise:
- 1/4 cup Mayonnaise
- 1 Tbls lemon juice
- 1 tsp. lemon pepper
- 1/4 tsp. dill (optional)
or
Tarter Sauce:
- 1/4 cup light mayonnaise
- 1/8 cup pickle relish

Deep Fried Fish
- 1/2 cup Aunt Jamima Original
Pancake Mix
- 1 cup flour
- Lawry’s Salt to taste,
or pink color
Mix together. Bread walleye or northern fillets
cut into chunks, sunnies and crappie fillets left whole.
Cover fish with mix and deep fry.
Chinese Dip:
- 1 small jar light mayonnaise
- 1/2 jar Chinese Mustard
- 6 Tablespoons honey
Add more Chinese Mustard if you like it hot.

Crispy Fried
Fish
Mix together:
- 1/2 cup flour
- 1/2 teaspoon salt
Beat together:
- 1 egg
- 1/4 cup water or milk
Crush 3 cups corn flakes or saltine crackers.
Coat fillets of fish in flour mixture, then
dip in egg mixture. Coat with crushed corn flakes or cracker
crumbs. Preheat thin layer of oil in bottom of pan. Fry
3-4 minutes on each side or until golden brown and flakes.

Baked Walleye
Place fish fillets in a greased baking dish.
Top fillets with lemon juice, lemon pepper, salt, pepper
and butter. Cover with aluminum foil and bake 375 degrees
for approximately 20-25 minutes or until flaky. Remove aluminum
foil the last 5 minutes.
For easy cleanup, may line pan with aluminum
foil and wrap fish.
May also place on grill wrapped in aluminum
foil. May need to add more butter and watch closely not
to burn.

Fried Parmesan Crappie
Ingredients:
- Expertly prepared crappie
filets
- Yellow corn meal
- Parmesan cheese
- Fresh dill weed
- Salt and fresh ground black
pepper
- Fresh lemon
Directions:
Filet crappie as demonstrated in Fish
Cleaning Made Easy. Combine equal parts of yellow corn
meal and parmesan cheese with 1 Tbsp of dill weed. Add salt
and pepper according to taste.Roll filets gently in the
batter mix until covered.
Heat cooking oil in frying pan or fryer to
375 degrees. Drop covered filets in oil and cook until golden
brown. Remove from oil and sprinkle with fre3sh squeezed
lemon juice.

Walleye
in Green Peppercorn Sauce
Ingredients:
- 4 Walleye fillets cut into
bite size chunks
- 12 Walleye cheeks
- 2 Tbsp butter
- 1/2 teaspoon grated lemon
rind
- 1 Tbsp green peppercorns
- 1 Tbsp fresh lemon juice
- Salt and fresh ground black
pepper
Directions:
Filet walleye as demonstrated in
Fish Cleaning Made Easy. Heat butter in large frying
pan over high heat until it begins to brown. To butter,
add lemon rind, fish and cheeks. Brown quickly, stirring
carefully. Add the green peppercorns and lemon juice quickly,
season with salt and pepper then cover the pan and remove
from heat. Cover and let stand for five minutes.

Jack Daniel's BBQ
Bacon-Wrapped Northern Pike Skewers
Ingredients:
- Northern Pike fillets - cut
into 1" cubes
- 1 pound of bacon strips, cut
in half
- Italian style dressing
- Jack Daniel's BBQ Sauce (or
your preferred brand)
- Bamboo skewers
Directions:
Filet northern pike as demonstrated in Fish
Cleaning Made Easy and cut into cubes. Marinate cubed
fish in Italian style dressing for 1 hour. Wrap bacon strips
around marinated fish cubes. Spear into skewers to hold
bacon wraps in place. Cook over medium heat on barbecue,
turning often. As the bacon begins to crisp, brush generously
with Jack Daniel's BBQ Sauce. Continue to turn skewers often
until fish is white and bacon is crisp.
Caution: The fat from the bacon
can cause grill flare ups. Watch carefully.

Simple and Tasty Baked
Salmon
Ingredients:
- 2 salmon fillets (about 1
inch thick)
- 1 tablespoon olive oil
- 1 small yellow onion, chopped
- 1/2 teaspoon dried minced
garlic
- Salt and pepper to taste
- 1/2 cup herb seasoned bread
crumbs
- 2 tablespoons mayonnaise,
or as needed
- 1 teaspoon mustard powder
Directions:
Filet salmon as demonstrated in Fish
Cleaning Made Easy. Preheat oven to 350 degrees. Grease
a large baking sheet and set aside. Heat oil in a skillet
over medium-high heat. Saute onion with dried garlic, salt
and pepper until tender. Transfer to a medium bowl, and
mix with bread crumbs, mustard powder and mayonnaise. If
necessary, add more mayonnaise to achieve a paste like consistency.
Place salmon fillets onto the greased
baking sheet, and press the crumb mixture on the top so
that it is about 1/4 inch thick. Bake for 10 minutes in
the preheated oven, until salmon is easily cut with a fork,
then broil for 5 minutes to crisp the top.

Cheater's Cheesy Panfish
Bake
Ingredients:
- 1 Lb. of panfish
- 1 can Campbell's Cream of
Mushroom Soup
- 1 cup shredded cheddar cheese
- Paprika
Directions:
Filet panfish as demonstrated in Fish
Cleaning Made Easy. Spray baking dish with nonstick
spray (Pam®, etc), season fillets and put
in baking dish. Cover with Campbell's Cream of Mushroom
soup (undiluted) and top with grated cheese. Sprinkle with
paprika. Bake at 350 degrees for 20 to 25 minutes
Serving suggestions:
Spoon over broad egg noodles noodles
or serve with wild rice.
